Dave enjoys toss­ing pizza crusts in the air and is now participating in contests and winning awards in the eastern United States.

Contests are held both in culinary and acrobatic divisions. In his first competition, Dave placed 14th out of 78 contestants. That contest was sponsored by the National American of Pizza and Ice Cream Show.

In 2005, the Smith’s went to the New York Pizza Show to see a dough toss­ing competition. Dave was hooked and felt the need to compete.

Dave prepared to go to Pittsburgh for the World Pizza Champions (WPC) contest sponsored by the Pennsylvania Restaurant Association. He came home with a first place in the fastest toss competition and third place in the largest stretch con­test, which revolves around an 18 ounce dough ball and a five-minute clock. The contestant must then stretch the dough to the breaking point without the breakage.

Dave plans to continue competing. His ultimate goal? … entering the pizza competition in Italy.

In the summer of 2006, Dave traveled to Orlando. Florida for the regional competition of the United States Pizza Team (USPT) at PMQ (Pizza Marketing Quarterly) magazine’s Orlando Pizza Show. He returned home with a third place finish in the culinary for a Cajun chicken pizza, which may find its way onto the menu in the future. He also placed third in the largest stretch, losing first by less than two inches.

Dave practices daily for weeks prior to a competition. He says that he learns something new at each competition. Dave and Marlene also work diligently on different recipes to use for the competitions. If they do well, some of these pizzas may be added to the menu.
